Alecia’s Favorite Vegan Oat Pancakes

Ingredients

  • ½ cup unsweetened coconut/nut milk
  • ½ cup filtered water
  • 1 Tablespoon fresh lemon juice OR apple cider vinegar
  • 1 ½ cups rolled oats
  • 1-2 Tablespoons coconut sugar
  • 2 teaspoons baking powder + ¼ teaspoon baking soda
  • 1 teaspoon pure vanilla extract

Instructions

  1. Make sour milk by mixing together milk, water, and lemon juice (or apple cider vinegar) in a small bowl. Set aside.
  2. In a food processor, add in oats, pulse, and let run until you have oat flour.
  3. Place oat flour into a large mixing bowl. Add in coconut sugar, baking powder, and baking soda and whisk together so dry ingredients are well combined. Add in vanilla and sour milk and whisk again.
  4. Heat up a small amount of avocado oil (or preferred oil) in a skillet on med-low heat. Cook pancakes, carefully flipping over when you see small bubbles forming on batter. Pancakes should be light golden brown. Make small pancakes as larger ones can fall apart when flipping.
  5. Serve with your favorite topping(s) or enjoy on their own. Topping ideas: pure maple syrup, fresh fruit, shredded coconut, jam, coconut cream, cocao nibs, walnuts, cinnamon, etc.

Ingredient Highlights

Apple Cider Vinegar is full of enzymes and good bacteria. It contains acetic acid, which has been shown to help lower blood pressure.

Coconut milk is made from the flesh of mature coconuts and is naturally sweet and creamy. It contains lauric acid, which has antimicrobial and anticancer properties and can help fortify immune function.

Coconut sugar is a natural sugar made from coconut palm sap. It’s the color and consistency of raw sugar but is considered somewhat healthier than table sugar as it has a lower glycemic index and contains some minerals, antioxidants, and fiber.

Oats are technically gluten-free because they aren’t a type of wheat, barley, or rye grain. However, if you have celiac or a significant gluten sensitivity, look for oats that are certified gluten-free to ensure no cross-contamination.

Vanilla was once used in Europe as an aphrodisiac and in the production of certain medicines such as nerve stimulants.
